A couple of days ago I cooked something I had not cooked for a long time and I wanted to share it with everyone. Years ago people on the forum were talking about taking a couple of links of Jacksonville out of the casings and shaping it into a small loaf. Then coating it with your favorite rub and smoking it to about 165 degrees. Of course you finish it with a coating of sauce. This stuff is really good. I like to eat it cold, thinly sliced on crackers.
It's rained so much I have not had time to cook very much but this sausage thing cooks in no time at all. I am not going to complain too much about the rain this year after two years of almost no rain. But the cool temperatures and rain makes the grass grow very fast. Yesterday I had to cut the grass again in less than one week. Anyway it is good exercise and even though I feel terrible after cutting the grass I always feel great after that extra workout for the next couple of days.
