Funny you should post this Ray. I buy sausage from Scavuzzo's in North Kansas City. They sell what they call BBQ pork sausage in a 12lb. coil. I remove it from the casing, add some BBQ rub and a little sauce and make it into little loafs and then onto the smoker. I was asked to cook for my niece's graduation party a few weeks back. I cooked three pork butts, 4 dozen chicken wings and 12lbs of that sausage and the sausage was the first to go. I have also used the same sausage and rolled into meatballs with a cube of cheddar cheese and a slice of pickled jalapeno in the center. Also very good. For such a simple thing, people absolutely love it.
