We've been dealing with the 3-4 hour "wait and hope" phenomenon down in the Texas Hill Country for some time now. Franklin BBQ didn't invent the 'bbq hipster', but just maybe there's enough population and demand down here now to support the economic success of several more independent bbq joints. Anything to cut down the wait times.
