So i mixed 2 Cups of Kosher salt with 1/2 cup of Sriracha sauce and placed in in an aluminum pan. The mixture was about 1/2 inch high. I was using my 22" WSM with a smaller charcoal ring to preserve fuel. It is about 12" across. I used one chimney of lit over one chimney of unlit charcoal then added another chimney of unlit after two hours.
After 4 hours I pulled the pan. It looked like a mixture of light brown sugar and Turbanado sugar. I haven't learned to post pictures. Now how should I use this? Not on popcorn! I will probably just substitute it for Kosher salt in my next batches of rub.
This could be addictive.
