Grizz's Pork Roast Cook Sauce (2/18/2001 11:38:53 AM by Grizz)
This sauce/marinade ROCKS!
1C chopped onion
3/4C chopped fresh garlic
2T tiger sauce
2T worchestire sauce
2T steak sauce (i prefer lea & perrins)
21/2T yellow mustard
add dry rub 3 pinches
3/4C orange juice (optional)
this work well as a marinade and mopping sauce. If using pork butt cut/poke slits in the meat with a steak knife,4" deep,several holes through out the whole cut, stick your finger in the slit to enlarge it. Work cook sauce into the hole,(you can use an injector if you prefer) let this bad boy sit in the fridge over night. Smoke to an internal temp on 170 for slicing or 185 -200 for pulling. You can tweek the recipe to accomodate your tastes.. Good luck.
