Hi there, this question is rather abstract. What is your goal? Is it cooking at 190 degrees pit and oven temp to see what happens? Not sure what you are after. At 225 either pit or oven rule of thumb is 1.5-2 hours a pound but you know this, and you have also seen the advice on wrapping. If you are cooking at 190 seems too low to carry the heat in a reasonable time.
I do know that if I let my pork cook over night and the pit goes down to 190 I crank it up to finish for the time I need it done. Mary Ann
