At 225 either pit or oven rule of thumb is 1.5-2 hours a pound but you know this, and you have also seen the advice on wrapping. If you are cooking at 190 seems too low to carry the heat in a reasonable time.

I do know that if I let my pork cook over night and the pit goes down to 190 I crank it up to finish for the time I need it done. Mary Ann
