Mary Ann, I'd like to cook it as long as possible over night in order to get a good/long nights sleep. I put them in the smoker at 5:00 p.m. and transfer them to the oven at 10:00 p.m. when I go to bed. I'd like to be able to sleep until 8:00 a.m. without attending it. I'm one of those people that requires a lot of sleep. So, what I'm wondering is just how long I can cook it if I start it at 5:00 p.m? The reason I don't start cooking later is because I want to get five hours of smoke on it before I put it in the oven at bedtime.
