Dave, your post on ribs comes at a good time for me. I was planning to look for some decent beef rib this week to braise. Had never heard of the curing process and may try it. I'll probably brown my ribs in a kettle, using charcoal and wood chips, and then put them in a crock pot. You mentioned placing them in your WSM. Do you smoke them until they are brown and then finish them in a pot with liquid in the oven? Just wondering how you go about it if you don't mind saying. Many thanks for a reply.
