I've only done beef ribs about 5 times. And every time but the first time, I've done the 3-2-1 method, just like I do spares... been very satisfied with them, all........... I either rub them with McCormick's Montreal Seasoning plus a tad of Durkee's Steak Dust and granulated brown sugar... or an old, but very good, beef rub I got from this site a long time ago;

Bear's Brisket Rub

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 Tablespoons Garlic powder
4 Tablespoons Onion Powder
4 Tablespoons kosher salt
4 Tablespoons black pepper
2 Tablespoons Thyme
2 Tablespoons Durkee's Steak Dust
2 cups Dark brown sugar (or granulated brown sugar)

Thoroughly combine all ingrediants.

Serving Ideas : Great on beef ribs, too.
