fisher 1, What I have done with good success is to season, brown over direct heat then into an alum pan with braising liquid up about half way. Put a little smoke on them then cover with foil to finish. This works very well with bison ribs also. You can add onion, carrot, garlic and celery to the braising liquid then blend and strain for the finishing sauce if you like
