Take red potatoes and cut into 3/4 inch squares. Boil till about half done. Drain. These can set a while if need be. In full pans, put potatoes, some olive oil and 2 packages of dry Lipton onion soup mix . Don't put too many potatoes in one pan. Only fill it about 1/3 to 1/2 full. Stir so that all the potatoes are covered in oil and soup mix. Cover with foil and cook in the smoker covered for about an hour at 325. The more potatoes in a pan, the longer it will take to cook. Stir potatoes every half hour. When just about done, take the foil off and let crisp up some.
The nice thing about this recipe is you can cut the potatoes smaller and it takes less time. You can crank the heat up to 375 if need be. If you don't have time or a way to pre-cook, cut into 1/2 inch squares and only fill pan about 1/4 full and they'll still cook in less than an hour at 350.
