Hi there, not sure where you live but I have found the cut Reg is talking about in Hispanic markets around here in Northern Virginia.

Short ribs are great. The short ribs you find in regular markets take about 4 hours in the oven or pit at 275-300 degrees and they are really good that way.

You can also cook them in the slow cooker with onions on top and bottom, no liquid necessary. Those take longer, I seem to remember 8 hours.

If you use the bbq pit take it easy on the smoke. Good luck. Mary Ann
