Depending on your location. JR Custom Smoke in Mesquite, TX makes a pure stick burner that only uses a few logs for an overnight cook and the rotissiere shelves, which are removable, can hold amost a 1,000 pounds and they go down from there. They have small portable to large ones installed under a vent. They are also HD and UL approved.

Used two of the large ones (one on a trailer) to cook 2,000 pounds of pork butt for the world's largest pulled pork sandwich and only used 12 1/4 stick 30 inch logs.
