Temperature and when to pull the butt to get a perfect money muscle varies. So that answer is not not much help but it's true. That's why a lot of cooks will cook several pork butts in contests. Even the best gets fooled sometimes. The general rule is that I get the best pulled pork if I cook the butt to around 205 degrees. The problem is the money muscle cooked to that temperature will fall apart unless you slice it very carefully with a good knifed.
Probably the best temperature for the best money muscle is to pull it from the fire at 180 to 185 and let it set a bit and them it will be about 190 - 195. I am sure that some people will say that that is all wrong. I think it's a fair bench mark. You just have to experiment and get your own numbers but it varies from butt to butt.
