Yo Mack, Two days is a lonnnnnggggg time to be soaking any kind of meat in a marinade that is highly acidic such as soda. It sounds like I am too late for that advice. The ribs will probably be mushy, but they will still eat.
Do not do the cooking in two stages like you were thinking about doing. The process is not food safe. Here is a quote from the USDA BBQ safety page which is linked below:
"NEVER partially grill meat or poultry and finish cooking later."
