I think for me it depends partly on how many racks I am doing. The pan does make it easier from the point of view of initial time if you have a lot of racks, but since it seems they always cook at slightly different rates you have to open the pan to check them, then pull out the ones that are ready, put the pan back in....
I tend to wrap to similar sized racks together in a foil pack. Generally both will be done at about the same time. Although I have been known to have to re-wrap one of the racks because is needed more time.
