smoked fish advice needed

i have a bunch of bluegill, crappie, and a perch i want to smoke. i caught them yesterday, and brined them overnight(gutted and whole) with a salt/brown sugar mix. my question is this-
can i use my commercial dehyrator, along with a grill kicker(small pellet smoke generator) to smoke these. my dehyrator only gets to 155 degrees, but does have a thermostat and timer(up to 12 hours). if i can, any idea how long it should take? i don't know the exact definition of "cold smoking", but this has to be getting close.
