Mike, I know this is way too late as you probably have already smoked your fish. Please let us know how it came out and what method you finally used. I don't know much about smoking fish other than some very general information. It seems like 155 degrees is the target temperature and as I remember it takes about five hours. That being said I remember seeing pictures of fish smoking in Alaska that were smoking for days. Like I said I don't know much about smoking fish.
