morning Ray. What looks like marbling in short ribs is actually connective tissue and as we all know it takes forever to break down.
I smoke roasted a batch on Saturday and they were seven hours on the WSM. A little apple wood for flavour, a mix of Montreal Steak Spice and my own blend of Creole spice made for a very good rib
