i've smoked a bunch of fish in the past ray, but its always been at hotter temperatures. i've seen those alaskan shows too, where they even dry fish in the sun. this dehydrator is nice, but i'm a little nervous about whether the fish will hit 145-155 internal, cooking it at 155.
i have to put it on this morning(before it goes bad), so i guess we will find out. i'll let you know what happens, i have the thermopen standing by. worst case, after 8 hours or so, i'll oven it hot to finish it to 150.
