I think your about on the money. I would shoot for 140 to 145 and my best guess is that would be about four to five hours. I cooked some real meaty baby backs a couple of days ago and the temperature was 145 degrees after four hours. It took more than five hours to cook them and I should have gone longer, but I was tired. I was cooking at about 260 degrees and I did not use any foil.
