Ray I did like the results of this process. It was much different from the typical juicy charred burger which I think a lot of people are after.
First of all I used 90% lean ground beef. I figured the cheese and bacon in the middle would add enough interest to make up for the difference. Which it did in a way. The meat was dense although I did not over-handle it at all. It was also cooked through, not at all pink. And barely charred as it was cooked almost indirect.
The flavor was great. Smoke, (a nice smoke ring), and the sauce in not just on the meat plus the touch of the blue cheese in the middle. Bacon was spare but you could taste it a bit.
Today I had a hamburger at a restaurant which was great,you could tell it had been prepared with good meat and care. A much more simple preparation but missing a lot of the flavor from the infused smoke and sauce.
I don't eat a lot of hamburgers so who knows. I just thought the sauce infusion was something different to try on ground beef. Lots of variations to try. M.A.
