What works best is to put a slice or two of apple in a zip-lok bag with the brown sugar overnight. I never believed that it would work either, and I tried it out of frustration. It DOES work. Since it's a 2 pound block, it might take a day or 2 to bet it completely softened up, but it will be partly softened around the outside after the overnight.
