When this question comes up all the lab experts come out of the woodwork. Remember that bumblebees are not suppose to fly but they do. I have had a number of water smokers and cook on them now as well. IMHO water/steam is a tool that you have to learn to use. Very few folks take the time to do this and a lot of misinformation gets pasted around. In my opinion, yes the steam helps keep the meat moist. There is a lot of difference between a water smoker and a smoker with a pan of water in it. If you really learn to use water/steam you will never want to be without it. My bark is fine as well.
What cookers are you looking at? Have you checked out the Backwoods smoker website?
