What I think is that water in a smoker is mostly used to regulate heat. The second thing is that it allows a moister environment so the outside does not dry out.
Wrapping is used for many purposes. To prevent too much smoke. To speed up the cook time. To add the moisture that prevents the outside meat from getting too hard. To add layers of flavor to the final product.
There are so many variables but in the end it's just cooking. Mary Ann
