FWIW, one small datapoint: The explosion of BBQ restaurants in NYC over the past few years. Used to be just Dallas and Virgils (ugh)... then Blue Smoke, RUB, Hill Country and Daisy May... now there must be about 6 or 8 new ones added to that in the past year.
