They only cooked it for 40 minutes? That must be a much higher temp. that my WSM can't handle. Between that video and the duck I had in Vegas last weekend... Well, I am off the store to get a duck to cook this weekend.

The duck breast had a Kumquat and mustard glaze, but I've never bought a Kumquat, never mind cooked with them. They are probably not for sale around this tourist trap of a sandbar.
