This last weekend as I was cooking 2 traditional briskets over mesquite coals in my fire brick lined concrete pit. While grandkids were inside under air conditioner playing on their smart phones. I got to think what BBQ means to me. I remember taking steer to the locker plant with my dad to be butchered and wrapped and in to the drawers. Being out side with my dad loading mesquite wood (had to watch out for the rattle biters). Going back to the locker plant and going in to the cold room (it was always above100 deg in West Texas) and holding the cold wrapped meat against my t shirted chest. The evening before the big Fourth of July party breaking up the wood and building the fire (with a sledge hammer, no axe or chain saw) I remember the glowing embers of the coal in the night as dad placed the briskets in the pit. Early in the morning walking out to the yard and seeing my dad half sleeping against the tree still watching his fire. then the big day came----Family and friends started coming with all kinds of vittles. Damm those briskets smelled good in the air. Being 73 years old a lot has changed! Pick frozen patties, turn on the gas grill, cook them 1500 degs. , premade tader salad, store bought processed pickles, lettuce out of plastic wrap. No blessing on the food! Now thats what they call BBQ to day. What does BBQ mean to you?
