How about smoked salmon? It's not hard and it's always a hit, and if you serve it as an appetizer a few filets go a long way. It takes some time - two hours in a brine, an hour to air dry, and two to three hours in the smoker - but the results are well worth it. Serve bite size pieces on slices of baguette spread with a mixture of cream cheese, capers, and red onion.
