I don't cater, but I'll throw in my calc's and let others tell me how "off" I am.

1500 people / 4 (1/4 pound of meat per person)= 375lbs.
375 lbs. x 2 (1/2 meat weight for shrinkage) = 750 lbs. starting weight for meat?

How off is this?!
