1500 people means 750 or less will probably eat. Take that number and divide by number of vendors. The cook for that many assigning 50% shrinkage loss.

Example 5 vendors. 750/5=150 people to feed. 4 oz per person so 600 oz needed. That's 1200 oz raw or about 75 lbs. you figure the split between brisket and pork.

Going to be hard o make any money. When I was doing vending I wanted minimum of 1000 people per vendor or 500 sales.
