225 too hot

I have been smoking for a few years now and have had this nagging bit in my mind. A lot of recipes and blogs I read advertise 225 degrees as low and slow and for things like pork butts, 225 degrees running 14-16 hours....I must be doing something wrong. I have two butts on as we speak and I decided to give 225 another try. Butts have been on for only four hours and internal is already 172!!!! There is no way I will make my intended 10 hours. Same problem with ribs, etc. etc. I ALWAYS end up going back down on my next cook and cooking at 175-185-195 for low and slow. Could someone enlighten me???
