I would not get caught too much in low and slow. I do think your temp gauge is off as that is pretty fast to be through the plateau for 225 but just cook it and don't worry about it. I have mostly cooked BBQ At 275 to 300 and it turns out just fine.
I really prefer it not be in the heat much longer than it needs to be.
