Like the others said, your grate temp may not be 225. Also your 170 temp is the beginning of the plateau and it takes a while once it gets to that point. More importantly....if you go back to what you used to do, cooking at 175 to 195, it is next to impossible to get a pork butt done when your shootin' for 200 degrees...
