I have a propane/gas assist and love it. Off a standard tank I can get 3-4 12 hour burns out of it. Mind you mine is thermostatically controlled and has 3" thick insulated stainless walls on all sides and is very efficient. Typically I will have smoke rolling on the meat about 1/2 of the total cooking time as a general rule of thumb. And of course if you are not using some wood and only using gas it is NOT BBQ and only an outside oven. I made mine from a commercial warming oven for a total of about 1300 bucks for a 25 cubic foot internal capacity pit. To buy an equivalent sized one retail would be 5-6 grand easy. And as far as taste....I'd put it up against anybody's pit. If I had to replace it I would do very little different
