I cook a lot of flats , usually 7/8 lbs . I cook around 250 and product is usually done in 6hrs. I usually don't trim the bottom at all , I just clean up the top. 3 hrs max in the smoke any longer you start loosing moisture, I foil after 3 hrs and add liquid of choice, I start probing after 2 hrs about every 20 mins . When the probe goes in with little resistance your done.
I used to cook them longer in the smoke but found out I was drying the flats out.
