Cook them and pull them and add a bit of rub and a neutural flavor sauce like apple juice and place in vacuum sealed bags, 5 lbs each. Toss in ref or freezer.
Day of event, bring to room temp, put in a pot of boiling water to reheat. Lose nothing in moisture and no additional flavor.
Pan for guest and allow them to sauce as they desire.
Do this for sampling gigs at Sam's, Wally world, Kroger, etc. Have done as much as 500 pounds this way with no degradation of the product.
