I have been asked if I would like to smoke a deer hindquarter. I get half for my troubles.
Anyone here ever smoked a deer hindquarter? If so, did you brine it? Use a rub? Bacon rap? Mop? Type of wood? Smoker temp? How long to cook? To what internal temperature.
I am looking for any advice you want to share.
