I have mentioned this before but I will do it again. My mother used to lightly boil venison in water and baking soda before cooking it to remove the gamey taste. As she did this a black scum would rise to the top of the water. She would remove this scum and take it out of the water and cook it normally. I have not had any venison to try this again so I can't verify this. However, if you check the link below you will find a marinade using baking soda to remove the gamy taste.
