Like him, I double seal and keep the water at a low simmer. Occassionaly you'll get pork soup but drain, rub and sauce and it's like new, sorta:-). This is caused, I believe, by the bag seam against the bottom of the pot and too much heat. I use a turkey roaster pot and try to place the bags on their sides. Good luck with you event.
