Ray, I remember Dr BBQ posting on here some time back that he thought pretty much of all the top cooks were braising their meats. (not a verbatim quote but something to the effect) If you read Myrons book and others that tell you to put ribs,brisket, etc in a pan with any liquid and cover the pan with foil you are braising.
