Very good idea. However, with a $500 budget I would try to get the 22.5" model. Whole briskets fit and ribs can lie flat. The larger water pan and charcoal ring are also huge benefits. There's a site that I'm sure many are familiar with that has a link to purchase the WSM from a certain large on-line retailer for $400 including shipping. With the other $100 this gentleman can get a kettle grill too. Your advice for getting both is perfect, though.
That reminds me, if any of you WSM'ers haven't tried cooking chicken without the bowl in place, give it a try. Great way to cook chicken. I think a lot would agree that chicken really does require a higher temp than the other traditional BBQ meats. By taking out the pan, the skin gets a high heat cook, but there are no flare-ups due to the distance from the coals and relatively low amount of oxygen. Start skin up and halfway through go skin down.
