Have you taken a kcbs judging class? They teach the pull test for tenderness using a slice.

Her in FBA country we often see a bed of chopped with slices of flat and burnt ends in the box. Judges try all 3. I personally think chopped point with some fine chopped flat is the best thing in the box although those tender juicy sweet chunks we call burnt ends can be mighty good.
