Since this will be the only protine, figure 4 to 6 oz cooked weight per person. Some will take more and some will take less. Your cooking loss is 50-55% which includes bone, fat, moisture loss, etc. Figuring 2 to 3 people per pound, you need 100-150 pounds of uncooked pork or 20 7 pound butts or 10 of Sam's double butts.
