I'm really big on either fresh or roasted tomatillo salsas on tacos lately. Both have distinct flavors. Not sure if you have time to get things to make something. Green enchilada sauce lightly mixed into the pork is good. Just dress the pork with it don't another it. Keep the taste of the pork there. A sour cream with cilantro and lime juice and a bit of chipotle powder works here along with the fresh limes you mentioned over the top. I'm with the cabbage idea over lettuce. Buy the angel hair or slice fresh. Black beans, cilantro, grilled corn cut off the cob sprinkled over meat is good. Queso fresco cheese is a nice change from the typical cheddar. Sliced avocado or guacamole.
Just get layers of flavors. Heat you flour or corn tortillas on the grill and keep warm in towels. You can put the towels in a warm oven set at lowest setting until needed.
I have 30 butts going this weekend. Now you have me thinking tacos:)
