Here is a video on cooking prime rib I think this guy does a lot of things wrong.
After cooking it to almost 130 degrees he wraps it and the temperature climbs to around 140. I think 140 is too much for prime rib. Is it really necessary to wrap it? Even if you don't wrap it the temperature will still rise a bit but wrapping it will make it go even higher faster.
