I really don't mean this as a smart a$$ answer, but it would depend what is wrong. If it is tenderness then I would look at cook times and temps. If it is flavor I would ask myself, "self, is this an issue with the smoke or the spices". If it was the smoke then I would adjusts the wood and/or exposure time. If it was not a smoke issue then I would go to the rub and sauce. If I didn't know enough to answer those questions I probably should back up and learn more about bbq before I started competing.
