Probably as with home brewing, you only change one thing at a time...otherwise you can never get back to where you were. As Stan says, depends on what you need to fix about the flavor. First thing I try to remember is that if an ingredient doesn't compliment the flavor, it takes away from it. I would start by removing or changing one ingredient.

But hey...it could be the quality of the meat, or the flavor of your smoke, and the ingredients may be fine.

Hmmm. I guess there is no magic answer :)
