rib problem

I keep cooking the bone side of the ribs off. Meat side turns out good. I'm cooking at 250, 3.5 hours on the pit, 1.5 hours in foil. They look good going in the foil, but come out with nothing on the back holding them together. Thanks in advance. Ed
