First off mullet is only good for two things, smoking or freezing and tossing across the Florida and Alabama state line at the Florabama bar. Assuming you need a recipe, here is the one I use.
First clean then brine the mullet in a salt & water mixture. There are some good videos on youtube. One cup of salt per gallon of water. A couple hours is good. Remove fillets from brine and place on a rack to air dry. When the fillets dry they will form what is called a pellicule. That is a tacky surface. Now they are ready to smoke. You can season them now if you like. Smoke the fillets according to your smoker instructions. I used a Lil' Chief smoker.
Now the recipe:
I never had exact amounts so this is to your own liking.
In a food processor add onion and process.
Add mullet and process with the pulse button until fish is chopped fine but not into mush.
Remove and put in a bowl and add tobacco sauce to taste, the juice of one lemon and only enough mayonnaise(not miracle whip) to moisten. Mix and serve on crackers.
